Garlicky Lebanese Lentil Soup with Swiss Chard and Lemon
submitted on 2024-11-02 by CarolM
This soup tastes best when it’s not piping hot, but has cooled down a bit and flavors can really shine through. Once the chard mixture is added to the lentils, the longer it is cooked the more the chard will lose its vibrant green color and the more the lentils will soak up the liquid, so keep that cooking to a minimum.

Guide to Summer Entertaining - A Last-Minute Party
An impromptu celebration is easy with our creative table-setting ideas, speedy recipes, and tips for stocking your pantry, fridge, and freezer (http://www.epicurious.com/articlesguides/entertaining/partiesevents/last-minute-party-menu)
Do your friends have a habit of dropping by unannounced? With our last-minute-party plan, including recipe (http://www.epicurious.com/recipes/menu/views/last-minute-party-menu) and table-setting solutions, you'll always be ready for an impromptu gathering.
recipe and entertaining tips:
Be Prepared:
Stock your pantry, fridge, and freezer, and you can feed a crowd on the fly. Dried pasta takes minutes to cook and goes with just about everything, including zesty sautéed shrimp, another smart freezer item. Keep on hand dips such as hummus, baba ghanoush, and guacamole, as well as crackers and flatbreads, olives, nuts, dried fruit, and cheese (many can be frozen), and set these out for nibbling while you start dinner. For speedy desserts, turn to ice cream, prepared chocolate sauce, fruit, and frozen pound cake, which defrosts quickly.
Add Bacon:
Wrapping asparagus spears in strips of pancetta—a close cousin to bacon—turns an everyday vegetable into something special for your guests. Use this trick with prosciutto, ham, and, of course, American or Canadian bacon, wrapping it around what you have on hand, whether it's mushrooms, potatoes, fresh figs, peaches, apricots, or frozen scallops.
Mix and Match:
Last-minute entertaining requires creativity. Shop your own closets and drawers to set a casual, eclectic table, using modern and antique pieces. Thermoses can be used to serve drinks or soup; leftover herbs can be turned into a centerpiece. The backyard and the recycling bin are other great resources. A wood plank makes a perfect trivet, while cleaned glass bottles can hold homemade beverages.

Guide to Summer Entertaining - A Backyard BBQ
Our video, recipes, and tips make it easy to throw a sizzling outdoor party (http://www.epicurious.com/articlesguides/entertaining/partiesevents/backyard-bbq-menu)
Fire up the grill—it's backyard barbecue season. To get you prepped and inspired for a summer filled with effortless entertaining, we've gathered five of our favorite warm-weather recipes (http://www.epicurious.com/recipes/menu/views/backyard-bbq-menu) for an easy all-grill feast. Plus, we set a bright, colorful table guaranteed to create a fun and festive party atmosphere.
recipe and entertaining tips:
Prep Ahead:
Advance preparation is the key to cooking a whole meal on the grill. Look at your recipes and pinpoint which steps can be done in the hours or days leading up to the party. For instance, you can form burger patties a couple hours prior to serving, and keep them chilled until you're ready to grill. Also, consider which dishes can be cooked in advance and served either cold or at room temperature. In this menu, the zucchini, salmon, and pineapple are all good candidates. Remember, sturdier veggies fare well cooked ahead, whereas more delicate produce wilts and gets soggy.
Go Bright and Go Bold:
Our table plan is all about having fun and embracing color. Feel free to mix and match a variety of summertime hues, including brilliant blue, vivid green, and sunny yellow.
Express Yourself:
Don't spend the party repeating the details and ingredients for each dish. Place a simple craft (or parchment) paper runner on your buffet table, and use a paint pen to label what's in each bowl or platter.
